Parisian Pickling (1870s) - First listed by J.J.H. Gregory in 1892 but grown earlier in France. This variety was used for gherkins or cornichons. It is very small and was originally known as Small Pickling or Gherkin Cucumber. Excellent for pickling or slicing when older. RARE. (60 days to maturity)

Corlis Bolton Haynes - Heirloom Jerusalem Artichoke from Corlis Bolton Haynes. This productive variety was growing behind the barn when Corlis’s parents bought the farm in 1924. Corlis continued to select the largest tubers for over 50 years. Can grow 8-12 ft high and have nice yellow small sunflower like blossoms. Very hardy - can over winter even in Zone 2 with snow cover. Fearing Burr (Field and Garden Vegetables of America, 1865) wrote, “When taken young, and properly dressed, they form an excellent substitute for turnips, especially in dry seasons, when a crop of the latter may fail, or become of inferior quality.”
